I disagree that high humidity helps when putting down water based finishes.
I'm in the Oakland area and generally the humidity is fairly low. I apply Traffic with a lambswool trowel
and put down three heavy coats on a 1 1/2 lb. clear shellac sealer coat.
Yesterday, I was putting down the final coat in a living room at about 10:30 in the am.
Halfway through, the humidity jumped and suddenly I was putting down honey. The front door was open
and ventilation was good.
Fortunately, Traffic is forgiving and the floor looked fantastic this morning.
